Hand harvesting happens between September and October. During the harvest the grapes are carefully selected. After destemming, follows a vinification with fermentation in stainless steel vats at a controlled temperature. The fermentation lasts in between eighteen to thirty days depending on the clone and grape quality of the vintage. Along
the fermentation it is necessary to do two pumpovers a day and delestages every 3-4 days. Refining lasts 18 months in stainless steel vats.
TASTING NOTES
It is a typical fresh Chianti wine of intense ruby red color with brilliant violet reflexes. Scents of red berries (cranberries, cherries, raspberries) are underlined by light spice notes. On the palate it is fresh and savory with flavors of cherry and blackberry and a hint of black pepper. It is a wine with fine balanced tannins, round and full bodied, with a nice freshness and lengthy finish.
