This Amarone della Valpolicella is the result of a rigorous selection of the best bunches of corvina, corvinone, rondinella, croatina, Oseleta. The grapes are harvested in plateaux and placed in the loft. This process, called withering, lasts about three months. During this period, thanks to the microclimate of the valley, the grapes undergo dehydration and lose up to 60% of their weight. By now the grapes are rich in sugars and are pressed and left to ferment in steel tanks by repeated bâtonnage. After fermentation, the wine, is put into new barriques where it is aged for about 24 months. The refinement continues in the bottle for another 12 months.
