The perfectly healthy bunches are displayed on racks under the roof facing north-east from where the typical Bora wind blows, cold and dry, which in October, November and December leads to drying in a natural way, reducing the yield to 18 liters per quintal. Before Christmas the grapes are pressed giving a thick must which is fermented in French oak barriques (50% new, 50% second passage). The triggering of fermentation and the subsequent stopping, after about a month, for the conservation of natural residual sugars, occurs via an exclusive heating/cooling system of the barriques themselves. In this way the must/wine does not undergo decanting.
